1/3 cup any biscuit mix
1/4 cup fresh parmesan cheese
1/8 tsp salt
1/8 tsp black pepper
2 slightly beaten medium eggs
2 cup shredded zucchini, unpeeled
2 tbl butter or margarine


In a large mixing bowl, stir biscuit mix, parmesan cheese, salt, and pepper. Stir in the eggs until the mixture is moistened. Fold the zucchini into the mixture. Melt the butter over medium heat in a large skillet. Drop by heaping tablespoons into the preheated skillet and cook 3 minutes each on each side or until brown.

Serve as an appetizer or as a side dish with your meal.
