Cucumber Salad Recipe
A delicious recipe for cucumber salad that can be served with any meal, but is perfect for summertime barbecues with friends.
The quantities for this delicious cucumber salad can be doubled or tripled depending on how much you want to make. A bottle of the liquid can be kept in the refrigerator the same as salad dressing.
Serves: 16-20 good eaters
4 cups water
2 cups vinegar
2 cups sugar
4 tbsp. salt
1 tsp. white pepper (it mixes in better than black, but black or mixed pepper can be used if you want to add color)
Mix together all of the above ingredients. Make sure the sugar is well blended.
Cut the following into thin slices: 6 cucumbers, 2 green (bell) peppers, 2 purple onions. Layer these in a bowl.
Pour the well-blended liquid mixture over the cucumbers, peppers, and onions.
Refrigerate for a few hours. This salad tastes best very cold.
Different colored pepper slices can be added for a more colorful cucumber salad.
Leftover liquid can be used again. Just cut in more vegetables. For those restricting sugar intake, substitute sugar can be used.
