Dolma Recipe: Grape Leaf Packets With Soft Cheese & Almonds
This dolma recipe is a wonderful combination of soft cheese, chopped dates, ground almonds, and lightly fried nuts enclosed in grape leaves.
1 1/4 cup full fat soft cheese
1/4 cup ground almonds
2 tbsp dates, pitted and chopped
2 tbsp butter
1/4 cup slivered almonds
16 grape leaves
salt and pepper
barbecued baby corncobs, to serve
Beat the soft cheese in a large bowl. Add the ground almonds and chopped dates, and mix together thoroughly. Season with salt and pepper.
Melt the butter in a small skillet. Add the slivered almonds and fry them gently for 2-3 minutes until golden brown. Remove from the heat and leave to cool for a few minutes. Mix the fried nuts with soft cheese mixture, stirring well to combine thoroughly.
Soak the grape leaves in water to remove some of the saltiness, if specified on the packet. Drain them, lay them out on a counter and spoon and equal amount of the soft cheese mixture onto each one. Fold over the leaves to enclose the filling.
Wrap the grape leaf packets in foil, 1 or 2 per foil packet. Place over the barbecue to heat through for about 8-10 minutes, turning once
Serve with barbecued baby corncobs and garnish with sprigs of rosemary and tomato wedges.
