2 cup blackberries
2/3 cup apple juice-unsweetened
1 tsp powdered gelatin
1 tbsp honey
2 egg whites


Cooking Instructions:
Place the blackberries in a pan with 1/4 cup of the apple juice and heat gently until the fruit is soft. Remove from the heat, cool then chill.
Sprinkle the gelatin over the remaining apple juice in a small pan and stir over low heat until dissolved. Stir in the honey.
Beat the egg whites until they hold stiff peaks. Continue beating hard while gradually pouring in the hot gelatin mixture, until well mixed.
Quickly spoon the foam into mounds on individual plates. Chill. Serve with the blackberries and juice spooned around
