Flavored oils are super easy to make, and they will bring wonderful flavor to your food. You can follow guidelines here, and make some flavored oils with your favorite herbs as well.


Garlic Oil
25 cloves of fresh garlic cloves
31/4 cup of extra virgin olive oil

Peel the garlic . Then heat the olive oil until it comes to a gentle simmer, and add the peeled garlic cloves. Simmer for about 20 minutes or until the garlic is tender. Remove from the heat and let it cool completely. Strain the garlic from the oil, and pour oil into a clean bottle and seal with a cork top. Use within ten days. Delicious brushed on meat or vegetables, especially before grilling. Also good drizzled on toasted, crusty bread. Makes about 3 cups.

Chili Oil

21/4 cups of extra virgin olive oil
1 fresh green chili pepper
5 fresh red chili peppers

First, fill a clean bottle with the olive oil. Slice the green chili pepper into rings and add to the oil. Then add the red chili peppers, which are left whole. Cork tightly and let it sit at room temperature for 2 weeks. Strain, discard the peppers and put the oil in a clean bottle, and close tightly again. Great for stir-frying vegetables or brushing on meats for grilling.


Rosemary Oil

21/2 cups extra virgin olive oil
4 sprigs of fresh rosemary her

Put the sprigs of rosemary in a clean bottle. Pour the olive oil in. Make sure they are all covered with oil. Put a tight cork on it and let it steep at room temperature for a week. Strain and discard the rosemary, and recap the bottle tightly. Great brushed on chicken and fish. Use within ten days.
