Next time you are entertaining, or just want to make a light and easy seafood salad, try one of the following easy recipes:

Crabmeat Salad

Ingredients:
1 lb. lumb crabmeat (or imitation)
1 brick 1/3 less fat cream cheese
1 teaspoon light mayonaise
2 teaspoons chopped green onion
Lettuce
3 slices of toast
Combine the above ingredients and chill for 1 hour. Serve in scoops on lettuce with toast points as a garnish. Squeeze some lemon on top if you desire.


Shrimp Farfalle Salad

1 1b. shrimp, peeled and cooked
1 1b. cooked pasta (farfalle or bow tie noodles)
1 tomato, diced
1/4 lb asparagus,cooked, cut in small slices
lettuce leaves
Mix the above ingredients and serve over lettuce. Drizzle with lemon or a vinagrette style salad dressing.

Chinese Shrimp Salad

1 1b. shrimp, peeled, and cooked
1/2 lb. crispy wonton strips
1 can water chestnuts
1/2 cup peapods
1/2 cup baby corn
1/2 cup peas
2 teaspoons sesame oil
Ginger, for seasoning
Soy sauce for seasoning
2 cups rice

Mix above ingredients and serve over the rice.
