2 cups white instant rice
3 cups water
1 medium squash, sliced
1 medium zucchini, sliced
1 cup chopped broccoli
1 medium cucumber sliced
1/2 cup snow peas
4 tbsp olive oil
1 tbsp soy sauce (opt)

1. Place rice and water in large pan and set on high and let come to a boil. When it comes to a boil, decrease heat to medium, and let simmer covered for 20 minutes.
2. Heat olive oil in frying pan on high for 4 minutes. When oil is heated, add vegetable and sautee for 5 minutes.
3. Remove from heat. When rice is through tender, spoon rice on plate and top with vegetables. Add soy sauce.
