2 c chopped frozen or fresh spinach
2 eggs well beaten
3/4 c diced velveeta cheese
2 tbsp bacon drippings
1 c toasted bread crumbs
1 tbsp vinegar
1/2 tsp pepper
Creole sauce

Thaw frozen spinach. Combine all ingredients except creole sauce. Stir gently to mix well. Place in greased 9 x 5 x 3 inch loaf dish. Bake in preheated 400 degree oven for 30 minutes. Let stand for 10 minutes; turn out on serving platter. Slice; serve with creole sauce.
