1 1/2 lb bulk pork sausage
2 c chopped celery
1/3 c chopped onion
1/4 c butter
1 recipe baked corn bread, coarsely crumbled
9 c day old bread cubes
2 tsp salt
1/2 tsp pepper
2 eggs, beaten
3 c broth or water

Cook sausage in a skillet, breaking up and stirring frequently, until lightly browned; drain. Saute celery and onion in butter in saucepan until tender, stirring frequently. Combine corn bread, bread cubes, sausage, salt and pepper in large bowl. Add celery mixture, mixing lightly. Add eggs and enough broth to moisten; mix well. Place in large casserole or baking pan. Bake in preheated 325 degree oven for 45 minutes to 1 hour. May stuff about 2/3 of the dressing into cavity of turkey and remaining dressing into neck portion before baking, if desired.
