Serves 8


6 oz. digestive cookies
2 oz. butter, softened
3 egg whites
7 oz. cottage cheese, drained
1 lb. cream cheese
2 oz. soft brown sugar
rind and juice of 1 lemon
2 tsp. custard powder
4 tsp. English golden syrup
1/2 oz. soft brown sugar
1/2 oz. butter
3 oz. pecans, halved and toasted


Using a food processor, blend cookies and butter. Press mixture into a 9 inch deep springform pan. Chill until needed.

Meanwhile, using the food processor, blend egg whites until stiff. Add cottage cheese, cream cheese, 2 oz. sugar, lemon rind, lemon juice, custard powder, golden syrup, and butter. Mix well.

Put syrup cheese mixture on top of the cookie base. Chill overnight. Serve chilled, sprinkled with brown sugar and decorated with pecans.
