The next time you want to enjoy some great outdoor grilling, go beyond hot dogs and hamburgers and try one of the following:

Skirt steaks - Have them tenderized at the grocery or butcher and marinate in teriyaki sauce for 2-3 hours.

Vegetables - Veggies taste great on the grill. For more delicate vegetables, place in a foil pouch and place directly on the grill. Try asparagus or portabello mushrooms. They both grill up very nicely.

Fish - Most firm fishes (swordfish, salmon, sea bass) do very well on the grill. Do not place directly on the grill, but put into a fish basket. (You can purchase these at a discount or hardware store) Keep a close eye when grilling fish, it tends to burn very quickly.

Instead of having dad outside grilling and mom in the kitchen, keep in mind that you can also put baked potatos or corn on the cob on the grill also. Just wrap in tin foil. The same goes for any type of french bread or garlic bread.

Try one of these marinades on chicken for a different taste: Teriyaki, soy sauce, lemon juice, lime juice, honey mustard, Hawaiian, or lemon dill. The grill will combine with the marinade to give them a nice smoky flavor.

Make sure you let your grill (gas or charcoal) heat up before placing food on. This will assure you a more even cooking. Also, make sure food is cooked thoroughly, not just charred on the outside. Grilling times will vary based on the thickness of the meat you are using.
