4 plantain bananas in skins
1 tbsp. lime rind, finely grated
2 tbsp. lime juice
2 tbsp. soft brown sugar
3 tbsp. ginger marmalade
2 tbsp. golden rum
mint leaves to garnish
8 scoops ice cream to serve


Preheat oven to 400 F (200 C). Put bananas in a greased baking dish. Bake for 15 minutes until skins turn dark brown.

Meanwhile, combine lime rind, lime juice, soft brown sugar, ginger marmalade, and golden rum in a pan. Bring to a boil. Boil for 1 minute, stirring constantly. Set aside and keep warm.

Remove bananas from oven. Skin and cut into sideways cut thick slices. Put in individual dessert dishes. Pour on ginger marmalade sauce. Allow to cool until just warm. Serve warm with two scoops of ice cream per person. Garnish with mint leaves.
