How to Make Mom's Minestrone Soup

½ Pound Diced Bacon

6oz Chopped Onions

¼ Teaspoon Garlic Powder

1 Gal. Beef Stock

6oz Chopped Cabbage

6oz Diced Carrots

6oz Diced Raw Potatoes

4oz Chopped Celery

2oz Chopped Spinach

6oz Green Beans

1oz Long Spaghetti

1 Pound Canned Tomatoes, Diced

14oz Red Beans, Canned

1 ½ oz All Purpose Flour

½ Cup Cold Water


1. Fry Bacon until crisp. Drain.

2. Sauté onion and Garlic in a little Bacon Fat until tender. Place with Bacon in a large Kettle.

3. Add Stock and Seasonings.

4. Heat to Boiling.

5. Add Vegetables and Spaghetti.

6. Simmer 45 Minutes.

Make a smooth paste of flour and water. Stir into soup. Cook 10 minutes longer.
