6 oz. butter, softened
6 oz. soft brown sugar
8 oz. self-raising flour
2 tbsp. Irish coffee powder
3 tbsp. cream
3 eggs, beaten
premade custard to serve


Using a food processor, beat butter, brown sugar, self-raising flour, Irish coffee powder, cream, and eggs together. Mix until smooth.

Pour pudding into a greased, 4-cup pudding dish. Cover dish with pleated sheets of silicon paper and foil. Secure overlapping paper and foil with a string, tying to the side of the dish. Note: the pleats allow the pudding to rise.

Put dish in a stock pot. Add enough water to the stockpot to come up to half way up the dish. Bring to a boil and cover. Steam for 3 hours, adding more boiling water if needed, until pudding is cooked. Serve pudding hot, topped with custard.
