Traditional Pizza Dough
One packet (2 tablespoons) of active dry yeast
1/4 cup + 1/2 cup of warm water
1/4 cup + 1 3/4 cups of unbleached all-purpose flour
2 tablespoons olive oil
1/2 t salt
1 T milk

Mix yeast, 1/4 cup water, and 1/4 cup flour in a large bowl, and let it rise for about 20 to 30 minutes. Add remaining ingredients and mix dough with a fork until a ball of dough forms.

Lighly dust clean table or countertop with flour. Knead dough with heel of hand, pushing the dough forward and turning it slightly, then folding it back over. Repeat ten minutes or until the dough is smooth and stretchy.

Lightly coat large bowl with olive oil. Shape dough into ball and place in bowl, coating with olive oil. Cover the bowl with a towel and place aside to rise. Dough is done when it has doubled in size, usually about 2 hours. When dough has risen, punch it down and allow it to rise again, about 40 minutes.

Roll out dough with rolling pin. For a softer crust, roll it out to 1/2-inch thickness. For crispy crust, roll to 1/4-inch thickness.

Place rolled dough into pizza dish. Push into dish lightly, pulling dough to reach the length of the dish.

Top pizza with sauce, cheese, and desired toppings and place pizza into a pre-heated 500-degree oven. Bake 10 minutes.

Quick Dough
2 1/2 cups flour
1 T salt
1/2 t garlic powder
1 T baking powder
3/4 cups milk
1/3 cup vegetable shortening

Combine dry ingredients. Blend in shortening and add enough milk to form soft, pliable dough. Pat dough into greased 12-inch pizza pan. Top with sauce, cheese, and spices and bake in a 375-degree oven for 20 minutes or until cheese has melted.


Pesto Pizza
2 cups buttermilk baking mix
1/2 cup water
1 T fresh chopped basil

2 cups pesto (bottled)
1 cup shredded mozzarella cheese

Blend baking mix, basil, and enough water to make dough. Pat dough into a greased 12-inch-round pizza pan, making high borders around the edges. Bake in a 425-degree oven for 10 minutes.

When dough has cooked, carefully remove from oven and spread on pesto. Sprinkle with cheese and return to oven. Bake 10 minutes or until cheese has melted. Cool slightly and cut.

Pancake Pizza Pour
2 large eggs
2/3 cup milk
1 cup flour
1 t salt
1 t oregano

1 cup tomato sauce
1 cup shredded mozzarella
1 small can drained mushrooms
salt and pepper

Make a batter by mixing eggs, milk, flour, and seasonings. Pour batter into greased 12-inch pizza pan. Bake in 400-degree oven long enough to form dough. Spread on sauce, cheese, and mushrooms and season to taste. Return to oven. Bake an additional 20-25 minutes. Cut into wedges and serve.
