French Fried Shrimp


1 ½ pounds raw shrimp peeled and deveined
½ cup lemon juice salt and pepper
2 beaten eggs
finely ground cracker crumbs
fat for deep frying

Place shrimp in a bowl with lemon juice, salt and pepper. Let them sit for 1 hour. Dip in the beaten eggs and roll in cracker crumbs. Fry in deep hot fat 3 – 4 min. Drain on paper towels. Serves 4.
