Fried rice is a favorite side dish. It's fast and easy, and a great way to use up those leftovers. Just about any combination of meats and vegetables can be tossed into the rice. One of the most important things to remember when making fried rice is to use day old rice. Freshly cooked rice will not make good fried rice because it is too sticky.

This recipe will serve 4-6


2 cups cooked day old rice
2 eggs scrambled
2 stalks finely chopped green onions
1-2 T cooking oil
1/2 cup chopped cooked meat (ham, chicken, pork, or shrimp)
1/4 cup chopped vegetables (peas and carrots are very popular, but you can use whatever you have on hand.)
1-2 tsp. (or to taste) soy sauce

Heat the cooking oil in a large skillet. Pour in the eggs and stir till nearly cooked. Add the green onions, meat, and vegetables, and stir about a minute. Quickly stir the rice in with the eggs, meat, and vegetables mixture. Pour in the soy sauce. Stir the rice till everything is well blended. Add more soy sauce if desired.
Note: A large spatula works best for stirring fried rice.
