Serves 12


6 oz. butter, softened
6 oz. soft brown sugar
6 oz. self-raising flour, sifted
1 tsp. baking powder
3 eggs
2 oz. dates, pitted and chopped
2 oz. figs, pitted and chopped
grated rind and juice of 1 lemon


Preheat oven to 350 F (180 C). Using a food processor, add butter, brown sugar, flour, baking powder, lemon rind, and lemon juice. Mix well. Fold in dates and figs. Bake for 50 minutes in a deep, greased, 8-inch springform cake pan.

Allow to cool in pan and turn out onto a wire rack. Serve cold with hot coffee or tea, or as a snack for kids.
