Here is a great Mexican recipe for fajitas. Try it the next time you want something different for lunch or dinner or are having company over.

Mexican Fajitas:

The recipe below is for chicken, but you can also try skirt steak or pork.

This serves 6 people.

2 lbs. boneless chicken breasts, cut in strips
1 large onion, cut in narrow strips
2 cups prepared guacamole
2 tomatots, chopped or diced
1/2 cup of lime juice
salt and pepper to taste
3 teaspoons olive oil
Sour cream to taste
2 cups monterey jack cheese.
Salsa for dipping

In a bowl marinate chicken and olive oil and salt and pepper for 15 minutes. After marinating, transfer to a skillet and sautee until white throughout. Warm tortillas. Transfer into tortillas and top with guacamole, onion, tomato sour cream and cheese. You can also top with salsa if you desire.
