1 lb dry red beans
1 lb white instant rice
3 lbs cajun spiced sausage
1 bottle Lousisiana hot sauce
2 tbsp cayenne pepper
1 tsp seasoned salt (opt)
1 tbsp black pepper

1. Soak beans in water overnight, adding 3 tbsp hot sauce to the water. Boil beans on medium heat for 1-2 hours until tender.
2. Slice sausage thinly into bit sized pieces, about 1/4 inch thick. Add to beans, along with peppers, salt, and 3 tbsp hot sauce.
3. Prepare rice according to instruction on package, adding 1 tbsp hot sauce to water.
4. When all main ingredients are done, drain excess juices from beans and sausage, leaving about 1 cup to moisten the mixture. Add rice.

Serve hot.
