Serves 4


For the Eggs Rarebit Benedict:
4 slices whole wheat bread
10 cherry tomatoes, halved
4 large eggs
4 thin slices maple smoked ham
1 tbsp. all-purpose flour
1 tbsp. butter
1 tbsp. dark English ale
1/4 cup whole milk
1/4 cup very matured old Cheddar cheese, grated
4 sprigs parsley

For the Buttered Fruit Bagels:
4 raisin or cranberry bagels
4 tsp. saltless butter

For the Fruits of Summer Spritzer:

1 cup frozen mixed summer fruits (ie. strawberries, peaches, apricots, cherries, etc.)
2 tbsp. white sugar
4 cups lemon and lime mineral water
4 sprigs of fresh mint to decorate


For the eggs:

Toast bread on both sides. Grill tomatoes for 3 minutes until soft.

Add oil to pan and fry eggs sunny-side up until the yolks are firm, about 7 minutes. Meanwhile melt butter in a pot. Stir in flour until completely mixed and thick. Gently add milk and stir into a paste and then a sauce. Heat gently.
Add ale and seasoning. Stir continuously until thickened. Remove from heat and stir in cheese until melted.

Arrange toast on plates. Add a piece of ham to each. Add an egg each. Pour over cheese sauce. Garnish with grilled tomatoes and parsley. Serve hot with Buttered Fruit Bagels and Fruits of Summer Spritzer.

For the bagels:

Toast bagels and spread on butter. Serve hot with Eggs Rarebit Benedict and Fruits of Summer Spritzer.

For the spritzer:

Put fruit, sugar and mineral water in blender. Blend until smooth. Serve chilled, topped with sprigs of mint.
