2 cups sugar
1 cups shortening
4 eggs
1 cup warm plain mashed potatoes
1/2 cup cocoa
2 cups flour
1 cup milk
1 teaspoon baking soda
1 teaspoon vanilla
1 cup pecans (optional)


Preheat oven to 350 degrees.

Cream shortening and sugar. Add eggs and beat until light and fluffy. Sift together flour, cocoa and baking soda. Mix mashed potatoes into sugar mixture. Add flour mixture alternately with milk, starting and ending with dry ingredients. Stir in pecans, if desired. Pour into a greased and floured 9x13 pan. Bake for 35 to 40 minutes.
