How to Make Pat’s Best Chicken Fried Rice.

1. 2 – whole chicken breast (about 2 pounds)
2. ½ teaspoon salt
3. 3 – cups Bean Sprouts
4. 3 – cups thinly sliced carrots
5. ½ cup vegetable oil
6. 4 – eggs
7. 6 – cups instant rice
8. ½ cup soy sauce
9. 6 – green onions (with tops) Chopped.

Remove bones and skin from chicken, cut chicken into small cubes, Toss chicken and vegetable oil into Wok, cook for about 10 minutes then toss in bean sprouts, carrots and green onions. Continue cooking until Vegetables are softened.
In a separate skillet fry the eggs, and then add to wok.
Cook instant rice according to directions on box, and then add to the rest of the ingredients, add the soy sauce, if you need or like more or less soy sauce, add according to taste. Continue cooking until all ingredients mixed together well and heated.
