Tortilla chips: preferably round chips although triangles will suffice
Your favorite canned chili: with beans, meat, or both (try it spicy)
Grated cheese: any kind, although sharp cheddar is probably the best
Diced onions: any kind (recommendation: regular white onions)


On a microwavable plate or tray, lay your chips out flat, making sure you don’t overlap them. Put a small blob of chili on each chip, sprinkle with diced onions, and cover with grated cheese. On top of this, place another layer of chips laid out flat, add more chili, onions, and cheese. Build the tower as you go, making it as high and as cheesy as you like. Make sure to put a blob of chili on each chip. When adding onions and cheese, it is fine to cover the whole layer and not stay within the limits of each individual chip.

When you have made your tower as big as you want it to be, place the whole thing in the microwave. Cook on high for about three minutes (or more, depending on how many layers you have). Basically, the idea here is just to warm the chili and melt the cheese. When it’s done, take it out and serve immediately.


It is always nice to have dishes of extra ingredients on your table so people can add whatever they like to this delicious snack. Some suggestions are: sliced jalapenos, sour cream, salsa, guacamole or sliced avocados, diced tomatoes, and black olives.
