1 box white cake mix
1/4 c maraschino cherry juice
2 tsp almond extract
2 egg whites
1 c water
18 maraschino cherries, finely chopped
1/2 c chopped walnuts

Place cake mix, cherry juice, almond extract, egg whites and water in mixing bowl; blend with electric mixer on low speed. Increase speed to medium; beat for about 4 minutes. Add cherries and walnuts,; mix. Pour into 2 greased and floured 8 inch cake pans. Bake in preheated 350 degree oven for 20 to 25 minutes. Let it cool.


1 pt heavy cream
6 tbsp sugar
Red food coloring
6 maraschino cheerries, cut in half

Whip cream until stiff, adding sugar gradually. Add enough food coloring to make icing delicate pink. Spread between cake layers and over top and sides of cake. Decorate with cherries.
