Are you tired of pancakes and eggs for brunch? Try this easy Blintze Souffle Recipe that is sure to please everyone in the crowd.

Blintze Souffle


2 packages frozen cheese blintzes, defrosted (a total of 12 blintzes)
1/4 lb. butter
4 eggs
1 1/2 cups sour cream
1/4 cup sugar

Grease a 9x13 glass casserole dish. by melting butter. Place blintzes in the casserole sidh "seam side" down, in rows. Mix eggs, sour cream and sugar and beat well. Pour over blintzes, evenly distributing the mixture. Bake for 45 minutes at 350. Serve with a side of sour cream or applesauce.

Note: For best results, use stick butter, not soft margarine or "fat free" butter/margarine.
