3 slices bacon
1 Tablespoon vegetable oil
1 small onion, chopped
6 ounces beef stew meat, ground
2 cups beef broth
1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
1 bay leaf
1 can of navy beans, drained
2 medium carrots, diced

Cook bacon and then set aside.
In same skillet heat oil cook beef and onion about 12 minutes or until beef is brown.
Stir in broth, thyme and bay leaf.
Heat to boiling, reduce heat, cover and simmer about 45 minutes, stirring occasionally.
Stir in beans and carrots, cover and simmer about 30 minutes or until carrots are tender.
Remove bay leaf.
Sprinkle bacon over each serving, serves 2.
