1 tsp. Dijon-style mustard
3 tbs. green chiles, canned and diced
2 tbs. cider vinegar
2 tbs. grated nonfat sharp cheddar cheese
ΒΌ cup diced green onions
3 drops Tabasco Sauce, to taste
1-2 minced cloves garlic
2 cups cooked, well drained kidney beans


Blend all ingredients, except green onions and Tabasco sauce in a food processor, or combine in a blender. Process the mixture until the texture is smooth and creamy. Add water if the mixture seems too thick. When desired consistency is reached carefully add Tabasco to taste. Cover and chill in the refrigerator overnight, allowing flavors to blend. Sprinkle green onions on top before serving as garnish.

Serving Suggestion:

1 Tablespoon. Serve at room temperature or slightly warmed. Ideal with blue and yellow baked tortilla chips, no salt added. Also great on top of nonfat bean burritos.
