Avocado Bread Recipe

Avocado bread is a loaf pan bread that is made with fresh avocado. Though it sounds odd, avocado bread is moist and delicious in flavor. Akin to banana or zucchini bread, this loaf can be served with brunch or as a dessert.
To make your own avocado bread, begin by preheating your oven to 350 degrees. Be sure to generously grease a 9 x 5 inch loaf pan. Then, prepare the following ingredients:
1 Small Avocado, peeled, pitted, and mashed (approximately 1/2 Cup)
1/2 Cup Buttermilk
1/3 Cup Vegetable Oil
2 Cups Flour
3/4 Cup Sugar
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/4 Teaspoon Salt
3/4 Cup Chopped Pecans
In a medium bowl, with an electric mixer or using a food processor with a metal blade, mix the egg, mashed avocado, buttermilk, and oil. Add flour, sugar, baking soda, baking powder, salt, and pecans. Mix until well blended but do not over mix.
Pour the batter into the loaf pan and bake at 350 degrees for 55 to 60 minutes. To be certain the avocado bread is fully baked, a toothpick inserted into the center of the bread should come out clean. Cool the bread for 10 minutes and then carefully turn it out of the pan.
Cut into 1/2-inch slices and serve with butter, cream cheese, or jam. Avocado bread tastes great plain and may be frozen and reheated.
