Hot and spicy restaurant recipes that can be served at home-a step aside from everyday meals, saving a lot of time, energy and money.
For us, today's women, who have to take care of the outside as well as the inside of their homes, the kitchen is no longer a chemistry laboratory to think and experiment on the varieties of vegetables and meats to prepare delicious dishes. Rather, cooking has become a tedious chore that need to be finished somehow with the least effort and time. So to keep our spirits alive and going, here are some unconventional spicy delicacies that will be a feast for both the eyes and tongue in the daily menu as well as the festivities and celebrations.
Ingredients: Chicken pieces (500 grams), cinnamon powder (1/2 tbl spn), onion paste (3/4 cup), oil (5 tbl spn), ginger garlic paste (3/4 tbl spn), red chilly powder (1 1/2 tbl spn), coriander powder (1 tbl spn), crushed tomato (10 tbl spn).
Method: The chicken pieces should be finely shreded. Adding cinnamon powder and one table spoon salt to the chicken, they are properly mixed. Separating the mixture into ten parts, the chicken is shaped into balls by hand. These are deep fried in oil and kept in a separate vessel. Oil is again heated in a pan and to it is added onion paste and stirred till brown. Ginger garlic paste is then added, stirred for a minute and then added are coriander and red chilli powder. After stirring for a minute or two, the crushed tomato is added. This should be cooked in high flame for about five minutes while stirring constantly. The chicken balls can now be added and cooked for ten minutes adding one and a half cup of water. The dish is then ready to be served hot.
GREEN PEAS BALLS:
Ingredients: Flour (1 1/2 cup), oil (2 tbl spn), green peas (1 cup) , ginger paste (1 tbl spn), green chilli paste (5 tbl spn), salt to taste.
Method: Heating the oil in a pan, ginger paste and chilli paste are added. This mixture is fried for two minutes. Salt and green peas are added to this mixture. After cooking this for four to five minutes, it is cooled. The peas mixture is then ground in a blender. Flour, oil and salt are mixed together adding water till a smooth dough is formed in the blender. Taking a small ball of dough and rolling it out, a little filling is placed in the center and closed to form a pouch. After rolling this out, it is fried. This tastes best when served hot.
CAPSICUM STUFFED WITH SPICES:
Ingredients: Capsicum (8 oz), coriander powder (3 tbl spn), cloves (3), turmeric powder (1/2 tbl spn), black pepper (1/2 tbl spn), ground cinnamon (1/4 tbl spn), plain yogurt (1 lb), oil (5 oz), salt to taste.
Method: The oil is heated in a pan. To it is added turmeric powder, yogurt, ground spices, salt and pepper and stirred till brown. This is removed from the fire after four to five minutes and cooled. Slits are made in the capsicum wall lengthwise and filled with fried spices. The pans is covered and cooked in low heat until the capsicums are tender. This is a delicious item to be served hot at lunch or dinner.
Ingredients: Potato (small and round -1/2 Kg), oil, salt to taste, onion paste (125 grams), ginger paste (30 grams), plain yogurt (50 grams), red chilli powder (1 1/2 tbl spn), clove (6 in number), cinnamon (2 sticks), turmeric powder (1 1/2 tbl spn), suger (1/2 tbl spn), lemon juice (1 lemon), green chilli (5 in number), fresh coriander leaves (25 grams).
Method: Peeled potatoes are kept in salty water for about 5 hours. They are then fried in oil till golden brown and firm and then kept aside. Oil is then again taken in a pan and the cloves, cinnamon and cardamom are added to it. After one minute, the onion paste is added. It is stirred for about five to six minutes till the oil separates. The ginger paste is then added and stirred for about two minutes. The red chilli powder and turmeric powder are then added and simmered. After adding sugar, stirring is done for four minutes. The yogurt is beaten and added to pan. Lowering the temperature, the fried potatoes are immersed for simmering. The pan is covered and cooked till the potatoes are tender. When it is done, it is best to serve hot garnished with slit green chillies and chopped coriander leaves.
